Ricotta Pikelets
Ingredients:
PIKELET BATTER:
2 ½ cups self raising flour.
2 cups milk.
4 eggs.
4 tablespoons of sugar.
2 tablespoons vanilla sugar.
RICOTTA FILLING:
300g fresh ricotta.
2 tablespoons sugar.
zest of 1 lemon.
Method:
Mix pikelet batter together in a blender.
Mix ricotta with sugar and lemon zest.
Heat gourmet griddle to medium.
Place tablespoon of batter in griddle.
Place a teaspoon of ricotta filling in middle of batter.
Cook until bubbles appear, then flip over to brown other side.
Sprinkle icing sugar over pikelets and serve.
