Mango Salsa

1 Small Mango.
1 Small Red Chilli.
10 Large Mint Leaves.
3 Sprigs of Coriander.
1 Sprig of parsley.


Peel the mango, slice flesh off the stone and dice into small pieces.
Cut and deseed red chilli, chop finely.
Chop parsley, coriander and mint finely.
Mix ingredients together.
Add garlic / oil / vinegar to a spooning consistency.
Refrigerate until needed.

Can be used as a canape base for marinated butterfly king prawns
served on mango salsa on spoons.
