Apricot Muffins
Ingredients:

1/2 cup vegetable oil.
1/2 cup sugar.
1/2 cup apricots, sliced.
2 whole eggs.
1 cup buttermilk.
2 1/2 cups plain flour.
3 tsp baking powder.
1/2 tsp ground cinnamon.
pinch of salt.
pinch of baking soda.

Method:

Combine wet ingredients.
Combine dry ingredients.
Pour wet ingredients into dry ingredients and mix till combined.
Add 1/2 cup of apricots sliced.
Bake at 220 deg C for 20-25 mins or until springy to touch.
Cool on baking rack and dust with icing sugar once served.
