Fennel Fritters

1 tbsp finely chopped fennel.
1 medium fennel bulb (500g), chopped finely.
3 green onions, chopped finely.
1 small carrot (80g), grated finely.
2 eggs beaten lightly.
75g ricotta cheese.
1/4 cup plain flower.
2 tsp baking powder.


Combine all the ingredients into a mixing bowl & mix well.
Heat vegetable oil in a large frying pan.
Place heaped teaspoons of mixture, slightly flatten out & shallow fry until golden brown on both sides.
Once cooked allow to drain on absorbant paper towel.
