Chocolate Chip Muffins


Choc Chip Muffin
Ingredients:

250g Plain Flower
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
2 tablespoons coco
175g caster sugar
150g chocolate chips (allow extra for splinkling on top)
250ml milk
90ml vegetable oil
1 large egg
1 teaspoon real vanilla extract

Method:

Preheat oven to 200 (deg C) and fill a muffin tray with paper cases.
Measure and place dry ingredients into a large bowl.
Pour all the liquid ingredients into a measuring jug & mix both together.
Lumpy batter is ok - some say it makes better muffins.
Spoon the batter into the muffin cases.
Sprinkle more chocolate chips on top if desired.
Cook for aprox 20mins (or until muffins have risen & are dark & springy).
