Tomato Sauce
Ingredients:
1 kg Tomatoes concasse style.
1 small onion (diced).
1 small carrot (diced).
1 celery stick (diced).
250g bacon (diced).
1 tablespoon butter.
1 Bay leaf.
1 talespoon sugar.
1 tablespoon lemon juice.
Black & white pepper & salt to taste.
Sprig of Basil and oregano.
Tomato paste to thicken.
Method:
Sautee onion, carrot, celery & bacon in the butter, add bay leaf, basil & oregano.
Fry until ingredients are lightly coloured.
Add tomato, sugar, lemon juice & seasoning & simmer for one hour, then add tomato paste to thicken.
Notes:
A combination of Tomato Provencale & Tomato Sauce will give the best result and flavour in a home-made tomato sauce.
