Poached Pears with Chocolate Sauce
Ingredients:
6 small ripe pears.
Lemon juice.
50g sugar.
300ml water.
Chocolate Sauce:
100g Plain chocolate.
1 tablespoon double cream.
Method:
Peel pears leaving them whole, without removing the stalks.
Brush with lemon juice.
Dissolve sugar in water over a low heat and add pears.
Slowly cook for approx. 20 minutes.
Use a skewer to test pears are evenly cooked.
When cooked, remove the pears with a draining spoon.
Use the remaining sugar & water syrup & boil to reduce to approx 3 tablespoons.
Break chocolate into syrup & stir until smooth.
Add cream, to mixture & pour over the pears.
Serve chilled.
