Coleslaw with Homemade Mayonnaise


1/2 green cabbage.
4 carrots.
3 tablespoons mayonnaise.
salt & pepper to taste.

Homemade Mayonnaise:
2 Egg Yolks.
1 Teaspoon Salt.
1 Teaspoon Olive Oil/Peanut Oil.
Black Pepper.
Cayenne/white Pepper.
1 1/3 Cups Olive Oil/Peanut Oil.
1 1/2 Teaspoons Vinegar.
Squeeze of Lemon Juice.


Homemade Mayonnaise:
Beat egg yolks with dry ingredients (can be substituted for Dijon mustard)
Add Oil gradually & when combined add Vinegar & Lemon Juice to taste.

Finely slice green cabbage.
Peel & grate carrots.
Mix together in a bowl & rub in mayonnaise, making sure the mayonnaise coats the cabbage & carrot, without making it soggy.
Add seasoning.

Fresh Herbs (ideal with fish).
Curry (ideal for egg mayonnaise).
Beetroot Juice (for pink coloured mayonnaise).
Mango puree.
