French Bean Salad

French Bean Salad

1 Kg fresh green beans.
1 small brown onion.
6 button mushrooms.
1 punnet cherry tomatoes.
Season to taste.

Garlic Dressing:
2 Eggs.
1 Cup Cider Vinegar.
1.2 Ltr Olive Oil.
1 Teaspoon Salt.
1 Crushed Garlic Clove.
Pinch of White Pepper.
2 Teaspoons Dry French Mustard.
1 Teaspoons Paprika.
1 Tablespoon Worcestershire Sauce.
Juice from one whole Lemon.


Top, tail & cut beans to approx. 3 cm lengths.
Blanche & leave in ice water to cool.
Peel & thinly slice onion & mushrooms.
Wash cherry tomatoes.
Strain the beans & toss all ingredients together in a bowl.
Add Garlic Dressing just before serving.

Garlic Dressing:
Beat eggs with dry ingredients.
Add oil gradually & when thickened add vinegar.
Add Worcestershire Sauce & Lemon Juice to a thin pouring consistency.
