Dragon Fruit
Also known as pitaya.
Oval to oblong shaped fruit with overlapping scales - can weigh from 150-600 grams.
Colour varies depending on species, main colour combinations are bright red skin and red flesh or yellow skin and white flesh or bright pink skin and white flesh.
Skin is not usually eaten, flesh is eaten raw and has a mildly sweet refreshing flavour.
Amongst the flesh are small black seeds similar to those found in Kiwi Fruit.
Best eaten chilled as the flavour is usually better, add a twist of lemon or lime juice to boost the flavour.
Commonly used in fruit salads, jellies, juices and frozen deserts.
Select those that have a rich colour & smooth skin.

Allow to ripen at room temperature - once ripe dragon fruit will give to gentle pressure.
Once ripe it can be consumed or refrigerated in a plastic bag for a couple of days.
