Avoid storing in the fridge unless you want to slow your banana's ripening - it will turn brown, however the flesh will stay firm and cream coloured for a few days.
Bananas are at their sweetest and ripest when the skin has no trace of green and dotted brown spots have started to appear.
If you are unable to easily break the stem to peel the banana then it is not ripe.
