General Description:

Small citrus fruit that is green when ripe.
Its juice delays discolouration of peeled fruit & vegetables.


Selection:

Choose limes that are brightly coloured and firm & feel heavy for their size.
Avoid limes that have blemishes or decay spots or look shrivelled and feel soft.
It is not uncommon for limes to have some yellow blotching due to sunburn.

Storage & Handling Information:

Whole limes can be refrigerated up to ten days in a plastic bag.
Can sometimes last up to several weeks, however the flavour will be greatly diminished the longer they are kept.
When the end of a lime's storage life is near, the skin becomes pitted.
Lime juice & Lime Zest can both be frozen.
