General Description:

Cauliflower is a vegetable that is packed full of goodness.
Made up of very densely packed flower buds. 
Surrounded by green leaves.
Typical colour is white, other colours are available as there are several varieties - some colourings are artificially induced.


Selection:

When choosing a cauliflower look for heads that are white, firm and tightly packed. 
Cream or yellowing heads often indicate age and they are not as fresh.
Avoid those with floppy leaves.

Also provides small amounts of Protein, Vitamin K, Vitamin B6,  Folate,  Pantothenic Acid, Manganese and Sodium.

Storage & Handling Information:

Cauliflower will keep for up to five days if stored in the crisper section of the fridge. 
If not already wrapped, store the head in an open plastic bag.
Try to keep the head stem-side up as this will prevent moisture form collecting on it.
