Leeks are a large member of the onion family and are closely related to chives, garlic, onion and shallots.
Often used to flavour soups and casseroles and they can also be used raw in salads.
Have several green stalks that originate from the thick, cylindrical white root end.
White root end is the edible portion.
Look for leeks that have clean, fresh stalks with very white stems and crisp, undamaged tops.
Generally small to medium sized leeks will have a good sweet flavour and will be tender in texture.
Good source of Vitamin C.
Also a source of Fibre and Folate.

To store fresh leeks - trim and store in the crisper or a plastic bag in the fridge for up to 1 week.
When cooking - avoid under cooking - cook until tender but not mushy.
